My tip on keeping your parsley or any other herb that has roots intact when bought. Wash the whole plant in veggie wash. Rinse and place in a small container with enough water to cover the roots. I used a one pint plastic ice cream tub for this. Place the whole container with the herbs in a ziplock bag and store in the crisper or the bottom part of the fridge where you keep your vegetables. This way the leaves won't dry out fast. Change the water every two days.
Just open the bag and take out as much herbs as you need and close it.
