Recipe: Longanisa Cebuana Aglio Olio


If you need some protein to go with your pasta without the heavy sauce, this one is for you. It's a meal itself and its very easy to prepare in no time. The sweet, mild spicy flavor of the Longanisa de Cebu compliments well with the garlic and pasta. 



Preparation time: 30 mins. 
Cooking time: 30 mins
Serves 2 to 3 persons

Ingredients:

  • 200 grams linguini cooked in salted water, al dente (reserve 3 tbsp of the cooking water
  • 3 tbsp extra virgin olive oil
  • 3-4 cloves garlic, minced ( I love lots of garlic)

  • 2 pcs. Virginia Foods Longanisa de Cebu, sliced thinly

  • A pinch of chili flakes (optional)
  • Salt and pepper to taste

Procedure:

1. Heat olive oil in a deep pan. 

2. Add chorizo slices and cook until slightly brown. It will caramelize a bit but careful not to burn it. 


3. Add the minced garlic and toss for a minute until fragrant. Do not brown the garlic. 


4. Add the reserved cooking water and salt. 

5. When the salt, dissolves in the water, toss the cooked linguini in the chorizo mixture until liquid is absorbed. 
6. Add chili flakes.

7. Turn off heat and drizzle with a bit more evoo if preferred. 

Serve warm with a slice of crusty bread.
