There are times that we like to grab something to eat right away especially in the morning when we are on a rush. And there are times that we crave for something sweet for breakfast like these fluffy and moist Chocolate Chip Banana Muffins. This recipe is super easy. You can make these a day ahead and eat or reheat them the next day. No special tools or mixer required, all you need is a bowl and a wooden spoon. Perfect with a glass of ice cold milk or a cup of freshly brewed coffee.
You can use this banana-muffin recipe as a base for another combination that you wish to add on other than chocolate chips, like chopped apples, whole blueberries, ground flaxseed, oatmeal flakes or even shredded carrots.
Banana Muffin Base:
4-5 bananas that will equal to 1 1/2 cups
1/4 cup melted butter (not margarine)
1/2 cup brown sugar or stevia
1 egg
1 tsp. vanilla
1 tsp. baking soda
2 tsp yoghurt
1 1/2 cups all purpose flour
Add on:
1/2 cup semi sweet dark chocolate chips
- Preheat oven to 350F or 175C. Line a 12 piece muffin pan with muffin cups .
- In a mixing bowl, mash the bananas with the back of the wooden spoon. Add the melted butter and continue to mix them until smooth in consistency but not chunky.
- At the brown sugar or Stevia, one egg and vanilla. Stir until mixed.
- Gradually add the yogurt, baking soda and all purpose flour and continue to stir until thoroughly mixed.
- Fold in the chocolate chips.
- Pour in muffin cup lined pan and bake for 15 to 20 minutes depending on your oven or until a toothpick inserted comes out clean.
