Recipe: Two Cheese Breakfast Fritata

This is an easy all in one dish perfect for breakfast. Traditionally, an Italian Fritata is fried in a pan (cast iron preferably) and finished off in an oven.  This is my shortcut version. All you need is to mix all ingredients and bake in an oven or in a turbo broiler. While waiting, you can brew yourself a cup of joe and read the morning papers. Isn't that stress-free? It keeps well in the freezer too. You just need to bake them in individual muffin pans so you can just heat what is needed. This recipe is also a good filling for a quiche. Just spread the pastry in a pie dish and pour this one in.



Preparation Time: 15 minutes
Baking time: 30-45 minutes depending on the oven
Serves 4-5

Ingredients

  • 5-6 medium sized eggs beaten
  • 1 tbsp. butter with 1 tsp oil
  • 1 small onion, minced
  • 3 slices of sweet ham sliced into smal 1x1 cm squares( I used Virginia brand)
  • 1 small red pimiento, chopped (atsal)
  • 3-4 basil leaves, chiffonade (or you may use green onions. I like the basil with the eggs)
  • 1/4 cup mild cheddar cheese, crumbled
  • 1/4 cup Eden filled cheese
  • (Or you may us any cheese you prefer)
  • 1/4 cup fresh milk
  • 1 tsp. baking powder
  • Sliced tomatoes are optional

Procedure

  1. Sauté and sweat the onions in the butter with oil ( the oil prevents the butter from burning). 
  2. Add the ham and coat them with the butter. Turn off heat. 
  3. Add this mixture to the beaten eggs together with the rest of the ingredients. Mix well. 
  4. Pour this mixture in a round 8" pie plate. 
  5. Bake at 250 degrees for 40 -45 minutes covered with an aluminum foil in a turbo broiler. Or 30 minutes uncovered in a conventional oven. 
  6. Remove the foil and brown the top for 15 minutes more
  7. You can tell if it's cooked through when a toothpick inserted comes out dry or without the runny egg. 

Serve with toast or rice.
