Preparation Time: 15 minutes
Baking time: 30-45 minutes depending on the oven
Serves 4-5
Ingredients
- 5-6 medium sized eggs beaten
- 1 tbsp. butter with 1 tsp oil
- 1 small onion, minced
- 3 slices of sweet ham sliced into smal 1x1 cm squares( I used Virginia brand)
- 1 small red pimiento, chopped (atsal)
- 3-4 basil leaves, chiffonade (or you may use green onions. I like the basil with the eggs)
- 1/4 cup mild cheddar cheese, crumbled
- 1/4 cup Eden filled cheese
- (Or you may us any cheese you prefer)
- 1/4 cup fresh milk
- 1 tsp. baking powder
- Sliced tomatoes are optional
Procedure
- Sauté and sweat the onions in the butter with oil ( the oil prevents the butter from burning).
- Add the ham and coat them with the butter. Turn off heat.
- Add this mixture to the beaten eggs together with the rest of the ingredients. Mix well.
- Pour this mixture in a round 8" pie plate.
- Bake at 250 degrees for 40 -45 minutes covered with an aluminum foil in a turbo broiler. Or 30 minutes uncovered in a conventional oven.
- Remove the foil and brown the top for 15 minutes more
- You can tell if it's cooked through when a toothpick inserted comes out dry or without the runny egg.
Serve with toast or rice.
