Recipe: Four Cheese Savoury Bread Pudding


Turn your "bahaw" na bread (day old bread) into something special for breakfast. This dish was inspired by my daughter's suggestion of turning my usual sweet bread pudding into something savoury with her favorite Virginia Bacon. 🥓 

Four Cheese Savoury Bread Pudding

3 slices day old bread, cubed
1 tsp. melted butter
1 pc triangle cream cheese
1 slice cheddar cheese
1 tsp. Parmesan cheese, grated
1 tsp. Mozzarella cheese, grated

1 egg beaten
1 cup milk
Paprika
Pinch of salt and pepper
Virginia Bacon sliced in 2 inch strips

1. Toss the first six ingredients and arrange them in a small ramekin. 

2. Beat the eggs together with the milk, paprika, salt and pepper. 

3. Pour the egg mixture over the bread mixture making sure the bread is well soaked. 

4. Arrange the bacon slices on top. 

5. Broil in turbo broiler on medium heat for 30 mins. And on high heat for the last 15 minutes or until the bacon is browned and the bread is fluffy and evenly toasted on top. 

To test if the inside is cooked when the inserted fork comes out clean.
