Recipe: Marbled Tea Eggs

Recreating this is a popular street snack in #Taiwan. It looks exquisite and elegant and no two eggs are alike. Perfect to serve at a party. Impress your guests with this easy to make recipe with easy to find ingredients. Magnolia Cage Free Brown Eggs works best because they are rich in flavor and free from antibiotics. Peppercorns and star anise adds a subtle flavor to these eggs while the tea and soy sauce contributes to its taste and marbled effect.

Ingredients
  • 6 Magnolia Cage Free Brown Eggs
  • 3 cups of water
  • 1/4 cup of soy sauce
  • 1 Tsp of salt
  • 1 Tbsp of sugar
  • 1 star anise
  • 1 Tsp whole peppercorns 
  • 2 black tea tea bags

Instructions
1. Prepare a pot of water and boil the eggs for 8 minutes. 
2. Remove the eggs from the pot. Cool down to room temperature for easy handling. 

3.Take a spoon and gently crack eggs’ surface only. Careful not to peel off the shells. 

4.Prepare the stew by combining water, soy sauce, sugar, salt, peppercorns, star anise and black tea tea bags. 

5. Add the eggs to the stew, bring the stew to boil and cook for 20 minutes in low heat. 

6.Turn off the heat and leave it in the stew until it cools. 


7. Drain on paper towel and gently peel off the shells. The dark stew should create nice marbled effect on the egg white. 

8.Serve with a few drops of soy sauce and sesame oil.

  2. Considering its been boiled for 8 minutes ,then 20 minutes more. It's definitely no t runny. :D
