Recipe: Fudgy Oreo Brownies

So Dad bought several packs of Oreos of the wrong variant. On ECQ? I hate the hassle of returning them to the supermarket. The kids don’t really like to eat the choco filling variant, they prefer the vanilla ones. 

Anyhoo, I was dying to make this fudge brownies using Oreo cookies by @bakerbynature on IG anyway so he’s saved. 😁


I reduced the sugar  and chocolate chips just a bit because I prefer it that way. I’m rewriting this with the reduced sugar for my kids’ future reference.

Ingredients:

  • 3/4 cup butter
  • 1 cup sugar (separated into 2)
  • 3 tbsp oil
  • 1 tbsp vanilla extract
  • 2 eggs plus one egg yolk
  • 3/4 cup flour
  • 1/2 tsp salt
  • 1/2 cup unsweetened cocoa powder (you may use Dutch processed if available)
  • 1 tsp instant coffee 
  • 1/4 cup semi sweet chocolate chips
  • 12-15 Oreo cookies broken into chunks 


Procedure:

  1. Preheat oven to 175C or 350F. Line a 9x9 metal pan with parchment paper and lightly grease with oil. 
  2. Melt butter in a saucepan with half of the sugar. Stir until the butter just melts but careful not to burn the sugar. 
  3. Turn off heat and stir in the oil and vanilla. 
  4. In another mixing bowl, whisk the eggs with the remaining sugar until well blended. 
  5. Slowly add the warm butter mixture in the egg mixture gradually l, little by little. Don’t dump everything or the eggs might scramble. 
  6. Add the flour, salt and cocoa powder and stir with a rubber spatula until just combined. Once you see they are mixed, stop. Don’t overstir or else the brownie will turn cakey. 
  7. Fold in lightly the chocolate chips and half of the Oreos. 
  8. Scrape this mixture into the prepared 9x9” pan and spread evenly. Add the remaining Oreo chunks on top. 
  9. Bake for 30 minutes until the edges are from and the surface is cracked and shiny. 
  10. Cool completely before slicing. 


You should see the kids gobble this up.
