It there is Orange Chicken then there’s Calamansi Pork.
It’s fresh, it’s citrusy, and it goes well with any crispy fried meat, poultry, veggie-meat or tofu.
INGREDIENTS:
200g lean pork cubes
1 teaspoon soy sauce
1/2 tsp salt
A pinch of white pepper
Batter:
3/4 cup flour
1/2 teaspoon baking soda
1/2 tsp unsweetened calamansi juice
3/4 cup water, adjust until it forms a thick batter
Sauce:
1/4 cup calamansi juice
2-3 tbsp white sugar
3/4 cup water
1 tsp cornstarch
- Mix and marinate the first four ingredients.
- Mix the flour, baking soda, calamansi juice and adjusting the water to form a thick paste.
- Dip the pork pieces in this battery and pan fry them in hot oil. Drain. Set aside.
- Mix all of the sauce ingredients to form a slurry.
- Heat the sauce in the pan until it becomes thick.
- Then toss the pork pieces in the sauce until as well coated.
- Serve with hot steamed rice.
